Ingredients

  • 8 small fish (red mullets) approx. 100 g each
  • 4 tablespoon butter
  • 2 cloves garlic)
  • 2 tablespoon lemon juice
  • 8 leaves sage

Instructions

  1. If possible, have the red mullet shed and gutted while shopping. At home, wash again under cold running water and dry with kitchen paper.
  2. Melt the butter in the largest pan in the house. Peel garlic and chop finely. Season the liquid butter with salt and pepper. Stir in lemon juice, garlic and the sage leaves.
  3. Place the fish in the hot seasoned butter and fry for about 4-5 minutes over a medium heat. Turn carefully, then fry again on the other side for 4-5 minutes. Serve and eat fresh from the pan.
