Ingredients

  • 1 gr. Piece (s) fresh ginger
  • 5 sprigs thyme or 2 teaspoons dried thyme
  • 1 clove (s)
  • 5 fennel seeds
  • 1 pepper - grain
  • 1 liter boiling water
  • 3 bags tea, black
  • 3 bags tea your choice (see variations)
  • sugar or honey
  • 1 lemon (s)
  • 8 cl syrup your choice (e.g. peach, pineapple, elderberry, etc.)
  • 1 liter cold water

Instructions

  1. Peel the piece of ginger and cut into slices.
  2. Wash the fresh thyme and put it in a tea infuser or sieve ball along with the clove, fennel and peppercorn (if the thyme branches are bent, the aroma will increase later).
  3. Bring the water to the boil and put the tea bags, ginger and spices in the tea infuser in a heat-resistant container (I use a 1 l glass measuring cup). As soon as the water has stopped boiling, slowly pour into the container. Let the tea bags infuse according to the instructions on the packaging, then squeeze out and remove. Let the spices steep for about 8-10 minutes, then remove them as well.
  4. Cover the container (with aluminum foil, if there is no suitable lid) and put the brew with the ginger pieces in the refrigerator for at least 3 hours (I usually do it overnight). The tea has to be cooled down relatively quickly, otherwise it will develop more bitter substances.
  5. When the tea is well chilled, sweeten to taste (I use between 30 - 45 g sugar) and stir until the sugar is completely dissolved. Squeeze the lemon, filter the juice into the stock and stir briefly.
  6. Now rinse 2 bottles, each with 1 l content, with hot water and have them ready.
  7. Now add 4 cl of syrup to a bottle as required (if you don`t want to use syrup, you can add a second lemon to the tea).
  8. Using a funnel and a sieve, pour 500 ml of brew into each bottle and add another 500 ml of cold water. Close the bottle, shake it briefly and store again in the refrigerator for at least 30 minutes.
  9. Best served in a tall glass with ice cubes.
  10. Variations:
  11. 3 x black tea and 3 x white tea plus peach, pineapple or elderberry syrup
  12. 3 x black tea and 3 x fruit tea plus peach syrup
  13. 3 x black tea and 3 x herbal tea plus elderberry syrup
  14. Tip: The higher the quality of the tea used, the better the result.
