Ingredients
- 1 kg potato (s), floury boiling
- 20 g iner
- 1 bunch coriander greens
- 1 chilli pepper (s), green
- 2 tablespoon oil (sesame oil)
- 2 cloves garlic, chopped
- 1 ½ liter vegetable stock
- 250 ml coconut milk, thick
- salt and pepper
- Sugar, brown

- Boil the potatoes in salted water, let them evaporate, peel them and mash them with the masher. Peel and finely chop the ginger. Chop the coriander. Core the chilli and cut into fine strips.
- Heat the oil in a saucepan. Briefly sweat the ginger while stirring. Add the chilli, garlic and a little brown sugar. Put the potatoes in the pot and fry briefly.
- Deglaze with vegetable stock, stir with a whisk to a creamy soup. Add the coconut milk and cook through briefly. Season with sugar, salt and pepper and serve sprinkled with coriander greens.
