Ingredients

  • 120 g white bread or toast
  • 4 garlic clove (s)
  • 4 egg (s)
  • 7 tablespoon olive oil
  • 750 ml water
  • 1 tablespoon paprika powder, hot pink
  • 0.5 teaspoon ½ salt
  • some chives
  • salt and pepper

Instructions

  1. Dry or toast the white bread, then cut into small cubes. Peel the garlic cloves and press them through a garlic press. Add the salt to the garlic and mash with a spoon and stir. Cut the chives into small pieces.
  2. Heat the oil in a saucepan and briefly sweat the garlic paste in it. Add the white bread and paprika and stir briefly. Add the water, stir, cover and simmer on low to medium heat for 30 minutes.
  3. Open the eggs and stir briefly in a mixing bowl. Then slowly add to the soup while stirring. Season to taste with salt and pepper. Serve the soup garnished with chives.
