Ingredients

  • 250 ml mayonnaise
  • 15 ml mustard, (Dijon mustard)
  • 15 ml lime juice, freshly squeezed
  • 15 ml chilli sauce, (Chipotle Chilli in Adobo)
  • 2 clove (s) garlic, chopped
  • salt

Instructions

  1. Put the mayonnaise, mustard, lime juice, garlic and chilli sauce in a tall container and mix until smooth with the hand blender. Season to taste with salt.
  2. Tastes great with tortilla chips, as a vegetable dip and as a dressing. Keeps in the refrigerator for several days.
  3. Chipotles are available online, from Mexican and US shops, but Spanish specialty shops sometimes have Chipotles in Adobo as well.
  4. Depending on the make, you can use more or less chilli (the La Costena variety is hotter, with El Torre you should possibly take a little more).
