Ingredients
- 2 tablespoon oil, neutral or peanut oil
- 1 head cauliflower
- 0.5 liter ½ coconut milk, unsweetened
- 0.7 liters water
- 1 teaspoon salt
- 1 tablespoon, leveled curry powder
- 1 cm ginger, freshly grated
- some cayenne pepper
- some paprika, hot pink
- possibly coriander green
- possibly croutons

- Heat the oil in a large saucepan, wash the cauliflower, cut into florets, sauté briefly. Then pour in the unsweetened coconut milk and water and add the spices. Cook for about 25 minutes until soft.
- Then puree with a stand mixer or hand blender. Can be served with fresh coriander and, if necessary, croutons.
