“Novinka” Salad with Herring, Potatoes and Bell Pepper

Very easy to prepare and delicious salad with herring, in which boiled potatoes and onions are harmoniously combined with bell peppers, sour apples and olives, creating a new, fresh and unique taste of familiar ingredients.
Ingredients
- Herring (fillet) – 300 g
- Boiled potatoes – 200-250 g
- Small salad onions – 1 pc. (70-80 g)
- Green sour apple – 1 pc. (100-120 g)
- Bulgarian pepper – 150 g
- Olives – 50 g
For the sauce:
- Dijon mustard – 1 tbsp
- Apple cider vinegar or wine 6% – 1 tbsp
- Ground black pepper – to taste
- Sugar – 1 teaspoon without a slide
- Salt – 1/3 teaspoon
- Vegetable oil or herring oil – 4 tbsp
Directions
- Let’s start with the sauce so that it’s infused while we chop the ingredients for the salad. Combine mustard, vinegar, sugar, salt, black pepper and oil. I had herring fillet in oil, and I added it to the sauce. You can add vegetable oil. Stir the sauce vigorously with a fork until it thickens slightly.
- Cut the onion into thin feathers. It is better to take a salad, mild onion. If the onion is spicy, then it is better to pour boiling water over it for 5 minutes.
- Cut the boiled potatoes into large strips.
- Peel the bell pepper from partitions and seeds. Cut into thin strips.
- Cut herring fillet into the same slices as potatoes.
- The olives can be left whole or cut into 2 or 4 pieces depending on the size. Cut the green sour apple into thin strips last so that it does not darken.
- Mix all the ingredients, pour over the sauce.
- Salad with herring, potatoes and apple is ready.
