Pasta with Beans, Rice and Pickled Mushrooms in Tomato Sauce

This original and hearty dish of pasta and thick tomato sauce with beans, rice and pickled mushrooms is perfect for a meal with your family. Preparing the pasta sauce quickly, but you need to boil the beans and rice in advance.

Servings: 4

Ingredients

  • Pasta – 250 g
  • Tomatoes – 520 g
  • White beans (dry) – 100 g
  • Round grain rice – 60 g
  • Pickled mushrooms – 100 g
  • Tomato paste – 70 g
  • Carrots – 100 g
  • Onions – 60 g
  • Dry Italian herbs – 0.5 teaspoon
  • Fresh rosemary – 1 sprig (4 g)
  • Salt – 1 teaspoon
  • Ground black pepper – on the tip of a knife
  • Fresh dill (for serving) – 10 g
  • Vegetable oil (for frying) – 2 tbsp

Directions

  1. Prepare food. Peel the carrots.
  2. Soak the beans overnight, then rinse, cover with clean water and, after boiling, cook over low heat for about 30 minutes. The beans should be soft, but not soft. Place the beans on a sieve. Rinse the rice, cover with plenty of water. After boiling, cook for 15-17 minutes (almost until the rice is fully cooked). Place the rice on a sieve and let the water drain.
  3. Peel the onions and cut them into small cubes. Heat vegetable oil in a skillet, put chopped onion there and fry, stirring occasionally, until the onion is translucent.
  4. Grate the peeled carrots on a coarse grater and add to the onion. Fry the carrots until soft.
  5. Cut the pickled mushrooms (I used boletus) into small pieces and add to the onions and carrots. Stir.
  6. Rinse the tomatoes, cut into wedges and send to the pan with the rest of the ingredients.
  7. Add tomato paste. Pour in a little decoction from the beans until you get a thick consistency. Stir. Add boiled beans, salt, black pepper, a sprig of fresh rosemary and Italian herbs. Stir and simmer for 5 minutes.
  8. Place the rice in the sauce.
  9. Stir. Simmer beans, rice and pickled mushrooms in tomato sauce for 10 minutes.
  10. Bring 2 liters of water to a boil, add 2 teaspoons of salt. Send the pasta to boiling water and, after boiling, cook according to the instructions on the package. Throw the finished pasta in a colander so that the glass is water.
  11. Finely chop the dill. Heat a plate, put some ready-made pasta on the bottom. In the center is a thick vegetable sauce with beans, rice and pickled mushrooms. Sprinkle chopped dill on top of each serving of pasta with beans, rice and mushrooms.
