Ingredients

  • 3 tablespoon oil (palm oil), red, or olive oil
  • 4 carrots, thinly sliced
  • 1 onion (s), thinly sliced
  • 1 white cabbage, sliced into thin strips
  • 5 potatoes, peeled, cut into 1 - 2 cm cubes
  • 1 teaspoon salt
  • 0.5 teaspoon ½ turmeric
  • 0.5 teaspoon ½ cumin
  • 0.5 teaspoon ½ pepper

Instructions

  1. Heat the oil in a large pan. Add the carrots and onions and sauté for 5 minutes. Add salt, spices and cabbage and cook covered for 15-20 minutes. Stir occasionally.
  2. Add the potatoes, reduce the heat and roast for another 15-25 minutes, covered, until the potatoes are tender. Stir occasionally.
  3. Couscous or injera tastes good with it.
