Potatoes Baked with Porcini Mushrooms and Cheese

It will be a real omission not to cook this delicious baked potato with porcini mushrooms during the season of fresh mushrooms. Separately, potatoes with strips and mushrooms with onions and sour cream are fried, laid out in layers in a baking dish, and cooked in the oven. The traditional cheese layer gives the casserole a golden-brown crust with a salty taste. For all its simplicity, the dish is worthy of constant “registration” in the kitchen!

Ingredients

  • Potatoes – 700 g (4 pcs.)
  • White mushrooms – 400 g
  • Bulb onions – 100 g (1 pcs.)
  • Sour cream (20% fat) – 80 g (3 tablespoons)
  • Hard cheese – 50 g
  • Vegetable oil – 3 tbsp
  • Salt to taste

Directions

  1. Peel the potatoes, wash and cut into strips. Pour one tablespoon of refined vegetable oil into a skillet and heat over medium heat. Place the sliced ​​potatoes and sauté for 15 minutes, stirring. Salt.
  2. While the potatoes are fried, heat one tablespoon of vegetable oil in another skillet. Peel the onion and chop finely. Place it in a skillet and fry for 10 minutes, stirring. Remove from heat. Turn on the oven to preheat to 180 degrees.
  3. Cut the porcini mushrooms into slices. Pour the remaining vegetable oil into a clean skillet and heat. Add the chopped porcini mushrooms and sauté over low heat, stirring, for 20 minutes.
  4. Transfer the fried onions to the fried mushrooms, stir. Fry everything together for 5 minutes.
  5. Put sour cream in a pan with mushrooms and onions. Salt everything, stir and simmer over low heat for 5 minutes.
  6. Divide potatoes into thirds. Place 2/3 of the fried potatoes in a 20×16 cm baking dish and flatten.
  7. Put the fried mushrooms in sour cream on the potatoes in an even layer. Place the remaining potatoes on top of the mushroom layer.
  8. Grate the cheese on a fine grater and sprinkle the potatoes with mushrooms on top. Place the dish in a hot oven and bake at 180 degrees for 20 minutes, until golden brown.
  9. Baked potatoes with porcini mushrooms are ready. Arrange on bowls and serve.
