Finely dice both types of salmon. Rinse the lime with hot water, finely grate the peel, squeeze out the juice. Rinse the dill, shake dry and finely chop. Peel the ginger and grate finely. Wash, peel and finely dice the celery.
Mix the salmon cubes with half of the lime juice, lime zest, dill, celery, ginger, egg white and cornstarch thoroughly in a bowl and season well with salt and pepper.
Shape the minced meat into 8 equally sized meatballs and fry them on both sides in hot clarified butter over medium heat. Then reduce the heat and finish cooking the meatballs for 5 - 8 minutes.
The hacking mass appears very moist in its raw state. But that doesn`t matter, they still get stuck.
I also added the egg yolks. Didn`t mind in my opinion.
I made rice with it and made a sauce from the rest of the lime juice, a good piece of butter and the gravy. Cucumber salad (or cucumber noodles) with white balsamic vinegar (and the rest of the lime juice) is recommended for the original recipe.
