Ingredients

For the meat:

  • 150 g oat meat from the neck area, cut into approx. 1.5 x 1.5 x 0.8 cm pieces

For the marinade:

  • 1 tablespoon oil
  • 1 medium garlic clove (s), pressed or finely chopped
  • 1 tablespoon lime juice
  • 1 pinch (s) salt
  • 1 pinch (s) sugar, brown

Also:

  • 3 tablespoon orange juice
  • 1 tablespoon soy sauce, light
  • 1 tablespoon ketchup, manis

For the sauce:

  • 1 tablespoon oil
  • 1 small onion (s), red, sliced
  • 1 clove (s) garlic, cut into small cubes or pressed
  • 10 g peanuts, unsalted peanuts or 5 peanut butter
  • 10 ml coconut water, made from a fresh fruit or milk
  • 1 teaspoon palm sugar, brown
  • 1 pinch (s) salt
  • 1 pinch (s) sugar
  • 1 teaspoon lime juice

Also: (for the honey sauce)

  • 1 tablespoon sauce (Kecap Asin)
  • 1 tablespoon sugar
  • 2 tablespoon orange juice

To garnish:

  • 2 small onion (s), red, quartered
  • 1 teaspoon spice paste (Sambal Bajak)
  • 2 tablespoon ketchup manis

Instructions

  1. Put the marinade ingredients in a large enough bowl and mix well. Add the meat and mix well. Marinate for 30 minutes.
  2. For the kacang sambal, heat the oil in a pan. Add onions and garlic and roast until fragrant. Add the remaining ingredients for the sauce and simmer for about 5 minutes. Remove from the hob and let cool down a little.
  3. Strain and pour the liquid into the blender. Puree while adding the peanuts in portions until the mixture becomes creamy and liquid. Season to taste with a pinch of salt.
  4. To prepare the satay skewers, place 4 to 5 pieces of marinated goat meat flat on a wooden skewer at least 20 cm long, leaving half of the skewer free. Mix the leftover meat marinade with 1 tablespoon of ketchup manis, 1 tablespoon of light soy sauce and 3 tablespoons of orange juice and use for grilling.
  5. Grill the satay skewers on each side at a high temperature until the meat turns chocolate brown. Brush the skewers with the leftover marinade several times and finally brush with the honey sauce. No more barbecuing.
  6. Place the sambal with the marinating ingredients on one side of an oblong plate and add the satay skewers from the other side. Nasi Putih or Nasi Goreng with white or fried rice also tastes good.
