Ingredients

  • 600 g chicken breast

For the marinade:

  • 2 tablespoon soy sauce, (sweet, if possible Indonesian)
  • 1 tablespoon soy sauce, (light)
  • 2 tablespoon sesame oil
  • 0.5 teaspoon ½ tamarind paste
  • 1 tablespoon water
  • 1 teaspoon pepper, (black, freshly ground)

For the sauce:

  • 2 small onions
  • 3 tablespoon oil
  • 250 g peanuts, (roasted)
  • 3 clove (s) garlic
  • 3 kaffir lemon leaves, (fresh)
  • 160 ml water
  • 1 ½ teaspoon sambal oelek
  • 1 lemon (juice it)
  • 6 tablespoon soy sauce, (sweet)
  • 0.5 teaspoon ½ salt
  • 0.25 teaspoon ¼ pepper, (black, freshly ground)
  • 0.25 teaspoon ¼ sugar

Instructions

  1. Cut the meat into cubes (approx. 2 x 2 cm).
  2. Dissolve the tamarind paste in 1 tablespoon of hot water, mix in the remaining ingredients for the marinade. Fold in the meat and let it steep for 2 hours.
  3. Put the meat cubes on skewers (watered wooden skewers for the garden grill or the metal skewers of an electric rotary grill).
  4. Preheat the oven to 80 ° C.
  5. Finely dice the onions, sauté in an ovenproof pan in 2 tablespoons of oil until golden brown. Place in the oven with the pan and roast until crispy, turning occasionally.
  6. Process peanuts into puree in portions (e.g. in a coffee grinder with a hammer), whereby even larger pieces of nut may be included.
  7. Chop the garlic and lemon leaves very finely, sauté lightly in 1 tablespoon oil. Pour the water on, add the sambal oelek, sugar, soy sauce and the peanut butter. Reduce creamy over a low flame, stirring occasionally. Add lemon juice, salt and pepper, season to taste. Finally stir in the fried onions.
  8. Surely you haven`t forgotten to cook rice and grill the skewers in the meantime, so you can serve!
  9. Remarks:
  10. Instead of grilling, you can simply fry the meat cubes with the marinade in the pan.
  11. Most of the ingredients are available in Asian stores, e.g. lemon leaves (which you can also freeze, by the way).
  12. Roasted onions:
  13. I make larger and larger quantities here, they keep in the glass for several months.
  14. I have given the ingredients as I think they are optimal, but you can also exchange a lot: Tamarind paste - grated peel of an unbeh. Lemon. Peanuts - ready-made peanut butter. Onions - pre-purchased fried onions. Soy sauce light - normal soy sauce. Soy sauce sweet - normal soy sauce, simmer briefly with brown sugar. Sesame oil - regular olive oil. Sambal Oelek - 2 small Hot peppers, finely chopped.
