Ingredients
- 260 g spahettini
- 600 g pointed cabbae
- 150 g pork belly
- 300 g onion (s)
- 4 cloves garlic
- 200 ml white wine
- 160 ml beef broth
- 200 g sour cream
- 1 tablespoon butter or margarine
- 20 g 8 herbs, frozen
- 1 tablespoon olive oil, cold-pressed
- 1 tablespoon caraway seeds, ground or freshly ground
- 1 tablespoon sugar
- 1 tablespoon salt
- 2 teaspoons paprika powder, noble sweet

- Peel, halve and roughly dice the onions. Peel the garlic and chop in to fine slithers. Remove the rind from the bacon and dice the bacon. Remove the outer leaves from the pointed cabbage and remove the stalk. Quarter the cabbage and cut into strips approx. 1 cm wide. Rinse the cabbage well in a pasta colander.
- In a deep pan (with a lid - cabbage will have to be added later) heat the oil over medium heat. Sweat the onion, garlic and diced bacon a little. Now add the freshly ground caraway seeds. Add the pointed cabbage and the salt and cook for about 4 minutes, stirring every now and then.
- In the meantime, add pasta water.
- Now add the white wine, the beef broth and the sugar and steam everything for 10 minutes with the lid closed.
- Now cook the pasta very firm to the bite and collect some (approx. 100 ml) of the pasta water.
- Add some of the collected pasta water to the cabbage and also add the spaghettini. Stir everything well and cook for another 4 minutes. Adjust the consistency a little with the pasta water.
- Add the herbs, butter and paprika and stir well. Mix with sour cream and season with a little salt and sugar if necessary.
