Ingredients

  • 75 g bacon, lean, streaky
  • 2 leeks, cut into strips
  • 2 carrot (s), cut into sticks
  • 50 g potato (s), cut into sticks
  • 1 ½ liter broth
  • salt
  • pepper
  • 4 fish (s) (kippers or other smoked fish)
  • 2 tablespoon tomato paste
  • marjoram
  • parsley

Instructions

  1. Cut the bacon into small cubes and fry until translucent. Add the leek cut into strips, carrots and potatoes cut into sticks and fry. Then pour in enough broth that it is about 2 fingers` breadth above the vegetables. Bring everything to a boil and cook for 20 minutes.
  2. In the meantime, skin the kippers, debone them and tear them into small pieces. Heat in a small pan over medium heat. Then add tomato paste. Season with marjoram and plenty of chopped parsley.
  3. Stir the soup well and season with salt and pepper. Add the fish, let it steep briefly and serve very hot.
