Ingredients
- 800 g tomato (s), ripe
- 200 g onion (s)
- 1 clove garlic
- 1 small pepperoni, mild
- 2 tablespoon olive oil
- 750 ml vegetable stock
- salt and pepper
- 1 bunch herbs (2 stems each thyme and parsley)
- 1 sprig rosemary (small sprig)
- 1 bay leaf
- 1 small celery, the heart it
- 250 g mozzarella
- 1 tablespoon chives for garnish
- some flowers (rosemary flowers) for garnish

- Wash the tomatoes, remove the stem and then cut the tomatoes into small pieces. Peel and finely dice the onions and garlic. Halve the peppers lengthways, then remove the stem, seeds and partitions and cut the flesh very small.
- Heat the olive oil and sauté the onions, garlic and peppers in it. Add the tomatoes and sauté briefly. Pour in the vegetable stock and season everything with salt and pepper. Add the bouquet of herbs and the heart of celery. Bring everything to the boil and cook covered for about 20 minutes over low heat.
- Drain the mozzarella well and cut into approx. 1/2 cm cubes. Remove the herbs from the soup with the celery heart. Now pass the soup through a fine sieve and season to taste.
- Pour into preheated soup bowls and sprinkle with mozzarella cubes, rosemary flowers and chives tips. Serve immediately.
