Turkey Zrazy with Mushrooms and Cheese (in the Oven)

Today we are preparing turkey zrazy with mushrooms and cheese. The secret of their tenderness and juiciness is in adding cream to the minced meat. The aromatic filling of fried mushrooms and grated cheese goes well with dietary turkey meat.

  • Minced turkey – 500 g
  • Champignons – 400 g
  • Hard cheese – 50 g
  • Cream 10% fat – 50 ml
  • Bread crumbs – 5-6 tbsp
  • Salt – 0.5 teaspoon (to taste)
  • Ground black pepper – 0.3 teaspoon
  • Vegetable oil – 2-3 tbsp


  1. We clean the champignons and refresh the slices on the legs. Cut the mushrooms into small cubes. We spread the mushrooms in a pan with heated vegetable oil (1 tbsp). Fry the mushrooms over medium heat, stirring occasionally, until the liquid has evaporated and cooked (5-10 minutes, depending on the size of the mushroom pieces). Let the mushrooms cool.
  2. Add breadcrumbs (2 tablespoons), cream, salt, and ground pepper to the turkey mince. Mix thoroughly. Rub the cheese on a fine grater.
  3. Mix the cooled fried mushrooms with grated cheese. We turn on the oven, let it heat up to 180 degrees.
  4. Divide the finished minced meat into 10 equal parts and form cakes. Put 1 tablespoon in the center of the cake. a spoonful of cheese and mushroom filling.
  5. Form an oblong cutlet. Similarly, we form zrazy from the remaining minced meat and filling. Roll the zrazy in the remaining bread crumbs on all sides.
  6. Preheat a frying pan with a little vegetable oil. Fry the zrazy for 2 minutes on each side over high heat, until golden brown.
  7. We put the fried zrazy in a heat-resistant form and send it to an oven preheated to 180 degrees. Bake for 15-20 minutes, until tender.
  8. Serve turkey zrazy with mushrooms and cheese hot with your favorite side dish or with vegetables. Enjoy your meal!
