Vegetable Turrets

Do you want to surprise your guests and family with an unusual and extremely tasty vegetable dish? Make vegetable turrets with grilled eggplants and zucchini for a delicious vegetable snack.

Ingredients

  • Zucchini (large) – 1 pc.
  • Eggplant (medium size) – 1 pc.
  • Bulgarian pepper – 2 pcs.
  • Tomatoes (small) – 3 pcs.
  • Purple onion (medium size) – 1 pc.
  • Garlic – 2 cloves
  • Green onions – 1 bunch
  • Low-fat sour cream – 100-150 g
  • Mayonnaise – 100-150 g
  • Wheat flour – 1 tbsp
  • Salt
  • Spice
  • Vegetable oil – for frying vegetables

Directions

  1. Wash the squash, dry it and peel it. Cut into thin circles, add salt, add spices. Dip in flour and fry on both sides in hot vegetable oil. So that the zucchini becomes soft, but with a golden crust. Wash the eggplant and cut it into circles. Season with salt, pepper, flour and lightly fry.
  2. Wash the tomatoes, dry them and remove the stalk. Then cut into circles. For bell peppers, we will also remove the stalk and seeds, wash the peppers, cut them first in half, and then into thin transverse slices. Finely chop the green onion.
  3. Peel the purple onion and cut it into rings. For the sauce, mix well the sour cream and mayonnaise. Beat the mass with a whisk to make it puffier. Peel the fresh garlic cloves and crush them in the garlic bowl. Add the garlic to the sour cream and mayonnaise mixture. Let’s mix.
  4. Now we will collect turrets from vegetables. Put the sauce on the zucchini circle, place a couple of tomato circles on top, then again the sauce. Next, put a fried eggplant circle, spread with sauce, sprinkle with green onions. Then again the sauce, and on it – bell peppers and purple onion rings. Then put a little more sauce than on the other layers, so that you can cover everything on top with another zucchini circle.
  5. The vegetable turret is ready. You can decorate the top with green onions and a tomato slice or chopped herbs. And you will need to make turrets from vegetables according to the number of eaters. And you can immediately serve the appetizer to the table.
