Ingredients

  • 6 leeks
  • 0.5 ½ bell pepper (s), green
  • 0.5 ½ chilli pepper (s), red
  • 100 ml olive oil
  • 100 ml vinegar (red wine vinegar)
  • 1 teaspoon sugar, brown
  • 1 teaspoon mustard, coarser
  • 450 ml vegetable stock
  • salt and pepper

Instructions

  1. Bring the vegetable stock to a boil. Clean the leek and cut into 5 cm thick rings. Cook in the vegetable stock for 15 minutes until soft. In the meantime, finely dice the paprika and chilli. Prepare a vinaigrette from paprika, chilli, oil, vinegar, sugar, mustard, salt and pepper. Drain the vegetable stock. Pour the vinaigrette over the leek and serve lukewarm.
  2. This salad is not only delicious, but also quick and easy to make and therefore a wonderful starter for guests who want something different.
