Adjarian Khachapuri “Boat”

Adjarian khachapuri is a boat-shaped khachapuri served with yolk, butter and herbs.

Servings: 3

Ingredients

For the test:

  • Butter – 30 g
  • Flour – 250 g
  • Warm water – 160 ml
  • Dry yeast – 1 teaspoon.
  • Sugar – 1 teaspoon
  • Salt – 0.25 teaspoon

For filling:

  • Suluguni cheese – 300 g
  • Yolks – 3 pcs.
  • Additionally:
  • Egg – for lubrication
  • Greens – for serving
  • Butter – for serving

Directions

  1. Prepare products for Adjarian khachapuri.
  2. Mix yeast with sugar.
  3. Pour the mixture with warm water, stir. Leave on for 10 minutes.
  4. Melt 30 g of butter.
  5. Mix flour with salt.
  6. Pour in the dough. First, knead the dough with a spoon.
  7. Then knead with your hands.
  8. Pour melted butter into the dough, knead for 10 minutes.
  9. Cover the bowl with the yeast dough with a towel or lid, put in a warm place without drafts. Let sit for 1 hour.
  10. Divide the matched dough into 3 parts.
  11. Grate suluguni cheese on a coarse grater. I have soft suluguni, sold under the guise of homemade. 🙂
  12. Roll out part of the dough into a circle. Lay out the cheese.
  13. Roll the edges a little.
  14. Fasten the ends of the dough so that you get a boat. Put some more cheese in the center.
  15. So form 3 khachapuri. Put on a baking sheet covered with parchment. Brush the dough and cheese with a beaten egg.
  16. Bake khachapuri “Boat” at 220 degrees for about 20 minutes.
  17. Serve ready-made Adjarian khachapuri with raw yolk (you can drive in the yolk and bake khachapuri in the oven for 2-3 minutes). Also, when serving, put slices of butter and fresh herbs on the “Boat” khachapuri.
