Ingredients
- 2 shallot (s), finely chopped
- 1 clove (s) garlic, very finely chopped
- 1 leek, cut into strips
- 1 carrot (s), cut into strips
- 200 g chicken breast fillet (s), finely diced
- 1 tablespoon oil (sesame oil)
- 750 ml vegetable stock
- 250 ml coconut milk
- 100 g rice
- salt
- pepper
- 1 teaspoon curry powder (heaped )
- 1 pinch ginger, ground (alternatively /4 teaspoon chopped ginger)
- 2 pinches turmeric
- 2 tablespoon lime juice

- Heat the oil in a large saucepan and fry the meat in it. Add the vegetables and sauté briefly. Pour salt, pepper, curry powder, ginger and turmeric over it. Sweat with and deglaze with broth and coconut milk. Then add the rice and cook everything in a closed pot for about 10 minutes. Season again with the spices and round off with lime juice. Serve hot.
