Ingredients

  • 7 rolls, stale, diced
  • 250 ml milk
  • 5 small egg (s)
  • 100 grams flour
  • 1 onion (s)
  • some butter
  • 0.5 ½ bunch parsley
  • 1 bunch chives
  • 125 g ham, smoked, diced into small pieces
  • salt and pepper
  • nutmeg

Instructions

  1. Put the bread in a bowl. Heat the milk and add it. Cut the onion into small cubes and sauté in the butter in a small saucepan. As soon as the onion cubes take on color, add the ham cubes. These should also sear a bit, but should not be too crispy and hard. Let cool a little, then add the eggs, the onion and ham mixture and the flour to the dumpling mixture. Add chives rolls and chopped parsley. Season with salt, pepper and nutmeg. Mix by hand and let the dough steep for 15 minutes.
  2. In the meantime, bring plenty of salted water to the boil in a large saucepan. Shape the mixture into dumplings and add them to the cooking water. Reduce the heat and let the dumplings simmer in the salted water for about 15 minutes. To serve, lift the dumplings out of the water with a slotted spoon.
  3. The specified amount of dough makes about 10 dumplings.
