Ingredients

For the dough: (pre-dough)

  • 150 grams flour
  • 150 g water
  • 10 g yeast

For the dough:

  • 350 g flour
  • 200 ml buttermilk
  • 1 teaspoon salt
  • 1 tablespoon malt coffee or baking malt

Instructions

  1. This recipe makes 10 very tasty buttermilk rolls with a fluffy crumb and a crispy crust.
  2. Mix the ingredients for the pre-dough with a spoon and let stand for 2 hours, the pre-dough has doubled in this time.
  3. Add the remaining ingredients to the pre-dough and slowly knead in the food processor for 10 minutes.
  4. Let rest for 10 minutes.
  5. Push the dough onto a floured work surface, knead briefly with floured hands and shape into a ball.
  6. Let rest for 30 minutes.
  7. Break off 10 pieces of dough and press the pieces of dough apart in an oval shape, roll up and let rise for another 30 minutes with the seam facing down. Of course, you can also form ribs with seams or baguettes.
  8. Bake with the seam up.
  9. Baking times:
  10. 250 ° C steam twice for 10 minutes
  11. 200 ° C 15 - 18 minutes, depending on the desired browning level.
  12. These rolls taste good the next day, simply rub them in with water-damp hands and put them in the oven for 5 minutes, then they still taste like freshly baked. Also an idea for Sunday when nobody wants to go to the bakery.
