Ingredients

For the dough:

  • 300 g flour, whole rain
  • 160 ml water, lukewarm
  • 1 egg (s)
  • 20 g yeast
  • 1 pinch (s) salt
  • 1 pinch (s) sugar
  • 1 teaspoon lard or goose lard
  • Flour for the baking sheet

For covering:

  • 600 g leeks
  • 250 g onion (s)
  • 150 g potato (s)
  • 2 tablespoon lard, if possible with cracklings
  • 2 sausages (Mettenden)
  • 3 cloves garlic
  • 1 cup sour cream
  • 200 g cream
  • 2 egg (s)
  • 1 teaspoon, leveled nutmeg
  • 1 teaspoon, leveled pepper, white
  • 1 teaspoon, leveled salt
  • 1 sprig rosemary
  • 1 teaspoon caraway powder
  • 300 g cheese, hearty (Appenzeller, cave cheese, mountain cheese or similar)

Instructions

  1. First put the Mettenden in boiling water, switch off and let steep for 10 minutes. In the meantime, make a yeast dough from flour, water, egg, salt, sugar, yeast and lard (best to dissolve in lukewarm water) and place in a warm place to rise.
  2. Now take the meatballs out of the water and let them cool down. Cut the leek and onion into rings, finely chop the garlic. Peel the potatoes and cut into approx. 1 x 1 cm cubes. Cut the meanwhile cooled sausage into cubes of the same size.
  3. Now heat the lard in a large saucepan and sauté the leek with the onions and garlic for about 5 minutes while stirring. Now add the sour cream and cream and bring to the boil briefly. Season to taste with salt, pepper and nutmeg. Add the potato cubes, stir well, bring to the boil again and set aside, covered.
  4. In the meantime our yeast dough has risen. Roll out and place on a floured baking sheet so that it also stands up at the edges. Grate the cheese.
  5. Now add the eggs, sausages, caraway seeds, rosemary and half of the cheese to the warm mixture and stir well. Spread everything on the dough, smooth it out and sprinkle with the cheese. Bake in a preheated oven at 170 ° C for about 35 minutes.
