Ingredients

  • 1 ½ liters water
  • 500 g oxtail or soup meat
  • 3 carrot (s)
  • 0.25 ¼ tuber / n celery
  • 1 onion (s)
  • 1 leek
  • 1 kg potato (s), floury boiling
  • 2 sausages
  • 2 bay leaves
  • 10 peppercorns
  • 5 allspice grains
  • 5 juniper berries
  • Salt and pepper, freshly ground
  • marjoram
  • nutmeg

Instructions

  1. Wash the oxtail pieces and add a peeled carrot, half of the celery, the green end of the leek stick, the washed but unpeeled onion, peppercorns, allspice, juniper, bay leaf and salt with 1.5 l of cold water, bring to the boil and leave for approx. Brew 1.5 hours more than let it cook.
  2. Boil the potatoes as jacket potatoes. Clean the rest of the carrots, celery and leek and cut into diamonds, cubes or pieces. Remove the cooked meat from the bone and cut into small pieces. Pour the broth through a sieve and cook the diced vegetables until soft as desired.
  3. Peel the cooked and still hot jacket potatoes and press or mash them into a saucepan. Add the soup meat and the diced vegetables. Stir in enough broth until the desired consistency is achieved. Season with pepper, salt, nutmeg and marjoram and let the sausages get hot in them.
  4. Apply the soup hot and serve with bread slices as needed.
