Ingredients

  • 300 g flour, white flour
  • 3 egg (s)
  • 2 tablespoons oil
  • 2 bags saffron
  • 1 pinch (s) saffron threads

For the filling:

  • 200 g ham, cooked
  • 200 g ricotta
  • 3 tablespoon parmesan
  • some pepper
  • some hot peppers or chilli
  • possibly cream

Instructions

  1. Make a saffron dough from the ingredients for the dough. Let the dough rest in cling film for about 30 minutes. Meanwhile, chop the ham and mix with the rest of the filling`s ingredients. Then roll out the dough into approx. 12 cm wide sheets (I use the pasta machine). Apply the filling to the top half of the dough with a coffee spoon at a distance of approx. 5 cm. Brush the lower half of the pastry sheet with water and fold up. Press firmly, also between the fillings.
  2. Now cut the ravioli apart with the pastry wheel. Place the ravioli on a baking sheet lined with baking paper and bake at 180 ° for about 20-30 minutes.
  3. Serve warm with various dips.
  4. Tips: The ravioli can be served as a main course for 4 people or as an aperitif for 6 people. Baking makes them crispy and resembles a bread roll. The ravioli can also be cooked and served normally in boiling salted water.
