Ingredients
- 200 g couscous
- 1 teaspoon cinnamon
- 2 teaspoons curry
- Vegetable broth
- 1 orange (s), organic
- 1 lemon (s), organic
- 2 tablespoon honey
- 4 tablespoon olive oil
- 1 carrot (s)
- 250 g cherry tomato (s)
- 150 g date (s)
- 200 g fresh oat cheese thaler
- 100 g flaked almonds
- salt and pepper

- Mix the couscous with the cinnamon and curry, prepare with the vegetable stock according to the instructions on the packet and allow to cool. Roast the flaked almonds in a pan without fat and let them cool down as well.
- Peel and finely dice the onion. Wash the orange thoroughly, then rub the peel of the orange and squeeze the orange. Halve the lemon and squeeze one half. For the dressing, mix the orange and lemon juice, the grated orange peel, onions, honey and olive oil together and season with salt and pepper.
- Rinse and quarter the cherry tomatoes. Cut the dates into thin slices. Cut the goat cream cheese into cubes. Peel the carrot and cut it lengthways into thin strips (curls) using a peeler.
- Now pour the dressing into a glass bowl and pour the couscous on top. Then layer cherry tomatoes, fresh goat cheese, dates and flaked almonds on top. Finally, top the salad with the carrot strips.
- Just before serving, squeeze the juice of the second half of the lemon by hand and drizzle directly over the salad.
