Ingredients
- 400 g sweet potato (s)
- 125 g quinoa
- 200 ml vegetable stock
- 100 g chickpeas, (cooked)
- 150 g peas, (cooked)
- 125 g corn, (cooked)
- 3 spring onion (s)
- Ginger, fresher
- salt
- Garam Masala (optionally only pepper)
- 150 g cheese, rated
- 60 g pine nuts
- 100 ml cream

- Cook the sweet potato (s) (I`ll do it over steam). Cook the quinoa in the vegetable stock.
- Then roughly mash the sweet potatoes in a bowl.
- Mix in the quinoa, peas, chickpeas, corn, chopped spring onions and the grated ginger (I use a heaped tablespoon, which is not exactly a little, so less if you like).
- Season with salt and garam masala (or pepper - if you don`t have or don`t like G.M.).
- Then spread the mixture in a lightly greased casserole dish and bake at 180 degrees for 20 minutes.
- Take it out of the oven, sprinkle with cheese and pine nuts, pour the cream over it and bake for another 10 minutes until it is light brown.
