Ingredients

  • 800 g tofu
  • Soy sauce (approx. 100 ml)
  • 4 cm ginger
  • 2 medium clove (s) garlic or large ones
  • 2 teaspoons sugar
  • 300 g lentils
  • 0.33 cucumber (s)
  • 1 avocado (s)
  • 70 g rocket
  • 200 g mushrooms
  • 0.5 ½ zucchini
  • Balsamic, darker
  • oil
  • salt and pepper
  • mustard
  • possibly sugar or honey

Instructions

  1. First marinate the tofu. To do this, cut the tofu. It should have a height of approx. 1 cm and the width can now be cut to size depending on the vessel. Briefly weigh down with a cutting board and dab until it barely gives off any liquid.
  2. Chop the ginger and garlic and place in the jar. Now fill up with a little soy sauce, add the sugar and mix briefly. Place the tofu pieces side by side, then fill up with soy sauce until the tofu is almost halfway in it. Right at the beginning you can turn the tofu once so that there is already a bit of the mixture on the tofu at the top.
  3. Now let the tofu steep for about 20 - 30 minutes, then turn and marinate for another 10 - 15 minutes, depending on how intense the tofu should taste.
  4. In the meantime, prepare the lentil salad. To do this, wash the lentils several times and then cook according to the instructions on the package until they are soft. Try carefully every now and then, red lentils can quickly become too floury, then drain well and allow to cool.
  5. In the meantime, clean the mushrooms and cut them into small pieces (I like to cut into slices), also cut the cucumber and zucchini into small pieces. Wash the rocket well, cut off the stems and spin dry. Peel and dice the avocado.
  6. I use all of the ingredients raw! If necessary, you can of course also fry the zucchini and mushrooms.
  7. Now prepare the dressing. For the salad I only use a vinegar and oil dressing, salted and peppered with 1/2 tablespoon mustard. Depending on your taste, you can play if it is too sour, for example, you can sweeten it with 1 teaspoon of sugar or honey.
  8. Finally, carefully fry the tofu over low to medium heat (so that it does not burn) until the desired brown color and turn it every now and then. At the end, put all the ingredients together in a bowl, pour the dressing over it and mix well.
