Meat Stewed with Pumpkin in Cream

A bright dish based on Indian cuisine. Chopped pieces of meat are first fried with onions and pumpkin and then stewed in cream. Everything is seasoned with a spicy warming curry, sweet paprika, aromatic garlic, and spicy ginger. Juicy meat, creamy pumpkin, and fabulous aroma – just impossible to resist.)

Ingredients

  • Pork (pulp) – 300 g
  • Pumpkin – 250 g
  • Cream with 10-15% fat content – 150 ml
  • Onions (medium-sized) – 100 g (2 pcs.)
  • Fresh ginger – 10 g or dried ginger – 0.75-1 teaspoon (to taste)
  • Garlic – 10 g (3 cloves)
  • Salt to taste
  • Ground curry – 0.5 teaspoon (to taste)
  • Ground paprika – 0.5 teaspoon (to taste)
  • Ground black pepper – a pinch
  • Vegetable oil – 30 ml (2 tablespoons)
  • Parsley (for serving) – 2-3 sprigs

Directions

  1. Cut pork (any meat can be used) cut into small plates and beat off.
  2. Then cut the beaten pieces of meat into long cubes, salt, and pepper.
  3. Place the pork in a dry hot skillet and fry without oil over high heat. Evaporate all moisture, lightly brown (this will take 5-7 minutes, depending on the size of the meat cubes).
  4. Pour vegetable oil into the pan with the meat.
  5. Cut the peeled onions into medium cubes and add to the meat. Fry everything over medium heat, stirring occasionally, for 3-4 minutes, until the onion is golden.
  6. Season with paprika and curry.
  7. Cut the pumpkin into medium pieces (or cubes). Add to the pan, stir and fry for 5 minutes.
  8. Pour in the cream. If there is little liquid, pour in 100-150 ml of water (at your discretion). Bring to a boil, reduce heat, and simmer the contents of the pan over low heat for 20 minutes, until tender.
  9. Peel the garlic and ginger root. Finely chop the garlic, finely grate the ginger. At the end of cooking, add chopped garlic and ginger root to the pan (you can use dried ginger). Let all the flavors come together for a minute or two and remove the pan from heat.
  10. If you want a more pureed consistency of the dish, mash the pumpkin.

Serve the meat stew with pumpkin in cream and fresh herbs.
