Melon, Watermelon and Cucumber Salad

Finally, the watermelon-melon season has come. During this time, I always experiment with these seasonal treats. I suggest making one of my favorite salads with melon, watermelon, and cucumber.
Cook: 30 minutes
Servings: 6
Ingredients
- Sugar – 1/3 cup
- White wine vinegar – 3 tbsp
- Salt – 1/2 teaspoon
- Ground ginger – 1/2 teaspoon
- Odorless vegetable oil – 3 tbsp
- Olive oil – 3 tbsp
- Sesame seed (roasted) – 1 1/2 teaspoon
- Sesame oil – 1/2 teaspoon
- A pinch of ground red pepper
- Lettuce type lettuce
- Watermelon pulp (sliced) – 2 cups
- Cantalupe melon pulp (sliced) – 2 cups
- Honeydew melon pulp (diced) – 2 cups
- Seedless cucumber (cut into slices) – 1 cup
- Fresh cilantro (torn)
- Bacon (fried and crumbled) (optional)
- Baby spinach leaves (optional)
Directions
- Prepare the dressing. Pour sugar, salt, ginger, and vinegar into a small saucepan.
- Place the saucepan over medium-low heat and cook until the sugar dissolves.
- Transfer the dressing to a medium bowl. Gradually add vegetable and olive oil to the dressing, stir.
- Then add sesame seed, sesame oil, and red pepper.
- Cover the salad bowl with lettuce leaves, top with the pulp of the watermelon, cucumber, and the whole melon.
- Drizzle 1/2 cup dressing over salad, sprinkle with cilantro, spinach leaves, and bacon (optional), toss. Serve immediately, dripping with the remaining dressing.
