Nasi Goreng Kicap – Fried Rice with Soy Sauce and Eggs

Ingredients

  • 1 tablespoon vegetable oil
  • 2 tablespoon ghee
  • 3 large chilli pepper (s), red, finely chopped
  • 1 medium onion (s), red or brown, finely chopped
  • 1 kg rice (jasmine rice), cooked, preferably from the day before
  • 3 egg (s), lightly beaten
  • 3 tablespoon soy sauce, light
  • 2 tablespoon soy sauce, sweet (Ketjap Manis)
  • 1 bunch coriander greens, fresh, chopped

For the set:

  • 2 tablespoon fried onions
  • some coriander green
  • 1 lime (s), quartered
  • 200 g shrimp (s), possibly
  • 100 g peas, possibly

Instructions

  1. Heat the vegetable oil in the wok, add the ghee. Fry the chilli peppers and onions in the hot fat over medium heat for about 1 minute. Add the loosened rice and stir fry for another 2 minutes.
  2. Then turn down the temperature and push the rice to the edge so that a depression appears in the middle. Pour in the beaten eggs and let them set, stirring carefully in the middle every now and then if necessary. Mix with the rice when it has a scrambled egg consistency. Add the two soy sauces and stir-fry for 1 minute over medium heat.
  3. Mix in the chopped coriander and garnish with fried onions, coriander and lime quarters and serve.
  4. Variation: This simple version can of course be supplemented with other ingredients. 100 g cooked green peas or 200 g cooked prawns, which are added after the egg together with the soy sauces, are suitable e.g., very good.
