Potato Casserole with Sausage, Canned Corn and Pickled Cucumbers

Potato casserole with sausage, canned corn, and pickled cucumbers is a simple food dish that is perfect for a family lunch or dinner. The casserole is easy to prepare, but the result is very successful: soft potatoes, mouth-watering sausage, bright corn, and a delicious cheese crust.

Ingredients

  • Potatoes (medium) – 8 pcs.
  • Boiled sausage – 200 g
  • Canned corn – 240 g (1 can)
  • Pickled cucumbers – 3 pcs.
  • Bulb onions – 1 pc.
  • Hard cheese – 100 g
  • Milk – 100 ml
  • Eggs – 2 pcs.
  • Salt to taste
  • Ground black pepper – a pinch (to taste)
  • Vegetable oil – 3 tbsp
  • Fresh dill (for serving) – 2-3 branches

Directions

  1. Peel the potatoes, wash and boil in salted water until tender (about 20-25 minutes). Drain and cool.
  2. While the potatoes are boiling, we prepare the rest of the products for the casserole. Peel, wash, and cut onions into small cubes.
  3. Cut the boiled sausage into cubes. We also cut the pickled cucumbers into cubes.
  4. Heat 2 tablespoon in a frying pan. tablespoons of vegetable oil and fry the onion for 5-7 minutes, until golden brown. Add the sausage to the onion and fry for 5 minutes.
  5. Add pickled cucumbers. Next, we send corn.
  6. Fry the contents of the pan for 2-3 minutes and turn off the heat. Cut the boiled potatoes into slices about 1 cm thick.
  7. We turn on the oven to heat up to 200 degrees. Lubricate the baking dish with the remaining vegetable oil. Put half of the chopped boiled potatoes in it.
  8. Put the contents of the pan on top and level the layer. Put the remaining potatoes with an overlap (you can in any form) on top.
  9. Combine milk, eggs, salt, and ground pepper in a bowl. Mix the egg and milk mixture thoroughly until smooth.
  10. Fill the potatoes with the mixture. Rub the cheese on a coarse grater. Spread a layer of cheese in an even layer over the potatoes.
  11. Cook the casserole for about 25 minutes at 200 degrees, until the cheese is browned.
  12. We layout the potato casserole with sausage, canned corn, and pickled cucumbers on plates, sprinkle with fresh herbs if desired, and immediately serve.
