Sarmale in Romanian

“Sarmale” is the name of stuffed cabbage rolls in Romania or Moldova. And they, like us, have many options for different cabbage rolls. In addition, they wrap their cabbage rolls, in addition to cabbage, also in grape leaves. We will cook stuffed cabbage rolls in grape leaves (dolma) in the summer, and now try one of the most delicious options for stuffed cabbage rolls in Romanian.

Ingredients

  • Fresh white cabbage – 1 or 2 small heads of cabbage
  • Rice – 1 glass
  • Minced meat – 300-500g
  • Salt
  • Pepper
  • Broth – 500ml
  • Smoked ribs – 0.5kg
  • Sauerkraut – 0.5kg

Directions

  1. We cook cabbage rolls themselves, like ordinary cabbage rolls from fresh cabbage. We do not regret meat in stuffed cabbage. This can be a mixture of beef and pork in the form of minced meat, or finely chopped meat and fried with onions. There are recipes for sarmale from one meat, there are from meat with rice. I made cabbage rolls with rice. We also need 0.5 kg of smoked ribs or ham and 0.5 kg of sauerkraut.
  2. Lay out the bottom of the goose maker with chopped smoked ribs and cabbage.
  3. Then we lay out the sarmale (cabbage rolls). Again a layer of cabbage with ribs. So alternate layers up to the top of the pan. The top layer should be cabbage with ribs. Fill the sarmala with salted broth (you can dilute the broth cube) and put in an oven preheated to 180 degrees for 2 hours. You can cook sarmale on the stove.
  4. Serve sarmale with cabbage and smoked ribs. You can serve sarmale with sour cream and herbs.
