Saute with Potatoes and Green Beans

Potatoes and green beans are stewed in tomato sauce with onions and spices.
Servings: 4
Ingredients
- Green beans – 800 g
- Small potatoes (peeled and cut into small cubes) – 2 pcs.
- Fresh tomatoes (diced) – 700 g
- Extra virgin olive oil – 150 g
- Onions (cut into strips) – 1 pc.
- Garlic (chopped) – 2 cloves
- Hot water – 150 g
- Fresh parsley (chopped) – 45-60 g
- Salt to taste
- Ground black pepper – to taste
Directions
- Cut the green beans in half and cover them with ice water.
- Heat olive oil in a large skillet, add onions, and cook, stirring occasionally, for a couple of minutes. Then add the garlic, fry for 30 seconds. Put the potatoes in the pan, mix with the onion and garlic, cook for a few minutes.
- Put the tomatoes in a frying pan, cover with hot water, cook for about 5 minutes.
- Put the green beans in a colander, rinse and put in a pan, season with salt and pepper to taste, cover, and cook for about 30 minutes.
- Sprinkle the saute beans and potatoes with parsley and, if the beans are still firm, add some more water and cook until tender. Almost all of the liquid should evaporate.
- Serve sautéed beans and potatoes immediately, with slices of your favorite cheese (optional).
