Simple Summer Strawberry Pie

Recipe for a very simple and quick strawberry pie! You can diversify it with any berries or fruits. The berry pie turns out to be tender, juicy, with a pleasant sourness. It’s very cool to bake it in the summer!

Ingredients

  • Wheat flour – 300 g (2 glasses of 250 ml)
  • Chicken eggs – 5 pcs.
  • Sugar – 200-210 g (1 glass of 250 ml)
  • Vegetable oil (odorless) – 160 ml
  • Baking powder – 2 teaspoon
  • Vanilla sugar – 8 g
  • Strawberries (or other berries) – 500-600 g
  • Powdered sugar (for decoration) – to taste

Directions

  1. Separate the egg whites from the yolks. Carefully so that part of the yolk does not get to the proteins.
    Pour the proteins into a clean and dry bowl (preferably not a plastic one, in which the proteins are often not whipped).
  2. Mix sugar with vanilla sugar.
  3. Beat the whites with a mixer at low speed until a lush foam appears.
    Now we increase the speed of the mixer and add a mixture of sugar in 0.5-1 tbsp. We continue to beat until the sugar runs out.
  4. At this point, the squirrels should be beaten to stable peaks – this is when you turn the bowl, and the squirrels “stand at attention.” If the sugar has already run out, and the proteins are still not holding their shape, just continue beating until you see the desired consistency.
  5. Now at the minimum speed of the mixer, mix the yolks into the protein mass, one at a time. No need to beat, just stir until smooth.
    After the yolks pour in odorless vegetable oil in a thin stream – I had sunflower oil (it can be replaced with melted butter). Stir with a mixer until the oil runs out. The mass being whipped will not decrease in volume, it will simply become more liquid.
  6. Mix flour with baking powder. In several steps, we sift the flour into the resulting mass. Stir with a spatula, not for long, until smooth. The pie dough is ready.
  7. We shift the dough into a mold (mine was rectangular with sides 31 cm and 24 cm, 5 cm high). We level well.
    I put strawberries on top, but you can also other berries or fruits that need to be well drowned in the dough.
  8. You need to bake a pie with strawberries in an oven preheated to 170 ° C. Baking time – 1 hour 5 minutes. It is advisable not to open the oven when baking.
    We must check the readiness of the cake with a toothpick or wooden skewer.
  9. The berry pie should be allowed to cool in the form, then it can be transferred to a board or wire rack.
    When the strawberry pie has cooled, sprinkle with icing sugar and cut into portions.
