Smoked Eggplant, Mediterranean

Eggplants are very common in Mediterranean countries. The number of dishes that are prepared from eggplant is beyond counting. We offer you a very simple recipe for a truly folk eggplant dish, which is prepared in every home and in the best restaurants in the Mediterranean.
Ingredients
- Eggplant – 2 pcs.
- Olive oil – 2 teaspoon
- Coarse salt – 0.5 teaspoon
- Greens (cilantro, basil)
Directions
- Wash two medium-sized young eggplants and dry them. We wrap each eggplant tightly in foil so that we get several layers of foil.
- Put the eggplants in foil over an open fire and, turning from time to time, bake them until soft for about 15 minutes. The beauty of this method is that eggplant cooked on the gas stove in the kitchen smells as good as eggplant baked over a fire. We check the readiness of the eggplants with tongs – the vegetables should be soft.
- Turn off the gas, transfer the baked eggplants to a wooden board, remove the foil.
- Cut off the stem from the baked eggplant and peel it.
- Put ready and peeled eggplants on a dish, knead slightly with a spoon, decorate with herbs, cilantro and basil. Sprinkle the baked eggplants with coarse salt.
- Drizzle with olive oil.
- We serve delicious natural eggplant with the smell of fire to the table.
