Spaghetti with Chicken Breast, Vegetables and Basil

- 2 cloves garlic
- 2 spring onion (s)
- 200 g zucchini
- 300 g tomato (s)
- 1 bunch basil, (approx. 30 g)
- 200 g skinless chicken breasts
- 120 g spahetti
- 1 tablespoon olive oil
- salt and pepper

- Peel garlic and chop finely. Clean and wash vegetables. Cut the spring onions into thin rings. Halve the zucchini lengthways, then cut across into thin slices. Cut the basil leaves into fine strips.
- Place tomatoes in boiling water for about 10 seconds, rinse in cold water, peel off the skin and remove the stems. Quarter and core the tomatoes and cut the flesh into narrow strips. Cut the chicken fillets into pieces approx. 2 cm in size.
- Cook the spaghetti al dente.
- In the meantime, heat 1/2 tablespoon of the oil in a coated pan, fry the pieces of meat in it, season with salt, pepper and remove from the pan. Heat the remaining oil in the frying residue, sweat the garlic, courgette and spring onions in it and fry for about 2 minutes, stirring frequently. Salt the vegetables. Add the tomato pieces and heat, stirring, until they are hot through and through (but must not disintegrate). Add the meat and heat again while stirring. Take the pan off the heat, stir in the basil. Season the mixture with salt and pepper.
- Strain the spaghetti, drain briefly and serve in portions with the vegetable-meat mixture.
