Spicy Pumpkin and Almond Pie

The very airy spicy pumpkin and almond pie is more like a delicate sponge cake and can be easily used to make a cake.

Ingredients

  • Almond nuts – 120 g
  • Pumpkin (pulp) – 150 g
  • Ground cinnamon – 1 teaspoon
  • Carnation – 1 bud
  • Ground nutmeg – 1/2 teaspoon
  • Eggs – 6 pcs.
  • Flour – 150 g
  • Baking powder – 1 teaspoon
  • Sugar – 150 g
  • Lemon (zest) – 1 pc.

Directions

  1. Let’s prepare the products. Turn on the oven to warm up.
  2. Peel a slice of pumpkin and rub it on a fine grater.
  3. Load the almonds and cloves into the bowl of a stationary blender.
  4. Grind nuts and cloves into small crumbs.
  5. Sift all the flour with baking powder into a bowl.
  6. Divide the eggs into yolks and whites.
  7. Put the yolks in a separate bowl, add sugar to them.
  8. Beat up these ingredients with a mixer: the egg mass should lighten significantly.
  9. Add to the sweet egg mixture cinnamon, nutmeg, and lemon zest, which was previously grated on a fine grater.
  10. Mix until smooth.
  11. Now put chopped nuts with cloves and pumpkin into the resulting spicy mass.
  12. Mix again.
  13. Put the proteins in a separate bowl and beat with a mixer until stable peaks.
  14. Add the pumpkin-nut mixture to the sifted flour, mix.
  15. We will add the protein mass in parts, gently mixing it into the dough.
    Turn on the oven to heat up to 180 degrees.
  16. We should have a very airy dough.
    Cover the baking dish with parchment.
    Put the dough in a mold.
  17. We put the completed form in an oven preheated to 180 degrees and leave it there for 40-45 minutes. Cool the finished cake in the form.
  18. Then we extract a very airy spicy pie with pumpkin and almonds.
  19. You can serve it with a mug of milk. The crumb turns out to be very delicate, a spicy note is visible in the taste.
