Spicy Scrambled Eggs with Tomatoes and Cheese

Mexican style spicy scrambled eggs recipe. Scrambled eggs are cooked with tomatoes, garlic, and dried spices, including red pepper, which add an interesting spice. Such a delicious and completely easy-to-prepare breakfast from simple products is in the mood even on the gloomiest morning.

Ingredients

  • Eggs – 2 pcs.
  • Tomatoes – 200 g
  • Hard cheese – 30-40 g
  • Onions – 60 g
  • Garlic – 2 cloves
  • Tomato paste – 1 tbsp
  • Ground coriander – 1/4 teaspoon
  • Ground paprika – 1/2 teaspoon
  • Sugar – 1/2 teaspoon
  • Ground red hot pepper – 1 pinch (or to taste)
  • Salt to taste
  • Butter (for frying) – 20 g
  • Fresh parsley (for serving) – 2-4 sprigs

Directions

  1. Melt the butter in a frying pan. Peel the onions cut them into small cubes and put them in a frying pan with butter. Fry the onions over medium heat for about 3-4 minutes, until light golden brown.
  2. Naorach makes a cruciform incision. Dip the tomatoes in boiling water for 1 minute, then put them in cold water and peel them off. Cut the tomatoes into large slices. Peel and chop the garlic with a knife. Add garlic, tomato paste, ground paprika, ground coriander, red ground pepper, salt, and sugar to a bowl of tomatoes.
  3. Put tomatoes with spices in a pan with onions, reduce the heat to a minimum, and fry, stirring occasionally, for about 8-10 minutes. During this time, the excess liquid (juice) will evaporate, and the tomatoes will become very soft, mushy.
  4. In the vegetable mass, we make “holes” with a spatula. We drive eggs into the “holes”. Cover the frying pan with a lid and ready-made scrambled eggs with tomatoes for about 2 minutes, until the protein sets and the desired readiness of the yolk (I have liquid yolks inside).
  5. Rub the cheese on a coarse grater. Sprinkle the fried eggs with tomatoes with grated cheese.
    Cover the frying pan with a lid and wait a minute or so for the cheese to melt.
  6. Parsley greens for hire.
    Sprinkle spicy scrambled eggs with tomatoes and cheese with chopped parsley and serve hot.
