Ingredients

  • 500 g pasta (tortelloni with cheese fillin)
  • 200 g cooked ham, cut into small pieces
  • oil
  • 200 ml cream
  • 200 ml milk
  • 100 ml vegetable stock, strong
  • 5 tablespoon parmesan, grated
  • 2 egg yolks
  • 1 tablespoon tomato paste
  • 1 clove garlic
  • Thyme, dried
  • Parsley, chopped
  • salt and pepper
  • Nutmeg, grated

Instructions

  1. Cook the tortelloni according to the instructions on the packet.
  2. Slowly toast the ham brown in a pan with a little vegetable oil. Roast the tomato paste briefly and then deglaze with the milk. Add the stock and thyme and bring to the boil for a few minutes. Press the garlic into the pan and cook it briefly.
  3. Mix the cream, egg yolk and parmesan with a whisk and season with salt, pepper and grated nutmeg.
  4. Add the cooked tortelloni to the ham sauce, stir vigorously and stir in the cream / egg yolk / parmesan mixture. Heat gently until it comes to a boil. The sauce will soon become thick while stirring. Remove from the heat and finally sprinkle with the freshly cut parsley and serve hot.
