Delicious and tender homemade cheesecake. It is prepared as simply as possible and from readily available products that can almost always be found at home. Instead of expensive cream cheese, this recipe uses cottage cheese. There are many different cheesecake recipes, but this one I find the most successful. Such a curd cheesecake without baking will be an excellent addition to both a family and a festive table, as well as it will be a great dessert for little kids who do not eat such a healthy product as cottage cheese in pure form.
Ingredients
For the basics:
Cookies – 250 g
Butter – 100 g
For filling:
Cottage cheese – 600 g
Butter – 100 g
Egg – 1 piece
Granulated sugar – ½ cup
Soda – ½ teaspoon
Directions
Remove the butter from the refrigerator 20 minutes before cooking, so that it melts a little. And while the butter is melting, make some cookies. Break it into large pieces and grind it with a blender. If you don’t have a blender, just grind it with regular mashed potatoes.
I used Jubilee Morning cookies to make my cheesecake, but of course, you can use absolutely any sweet shortbread cookie. Combine melted butter and cookie crumbs. Mix them thoroughly together.
Put the resulting oil crumb in an even layer in a split mold, forming small sides. Pre-wrap the form with foil so that it would be easier to transfer the cheesecake to the dish later.
The base is ready, put it in the refrigerator while cooking the curd filling. Combine cottage cheese, butter, egg, and baking soda in a ladle.
Mix everything thoroughly and place it in a water bath.
Cook the mixture, stirring constantly, for 15-20 minutes. In the end, the mixture should be almost homogeneous and fairly fluid. Add sugar to the finished mixture and beat with a blender.
Remove the cheesecake base from the refrigerator and pour the curd filling into it.
Cool the cheesecake to room temperature first, then cover the mold with plastic wrap and refrigerate overnight.
By morning, the unbaked curd cheesecake will be ready. Transfer it to a large platter, cut into portions and serve this delicious dessert with hot tea.
