Ingredients

  • 1 clove garlic
  • 1 small carrot (s)
  • 1 small bell pepper (s)
  • 1 small zucchini
  • 1 small onion (s)
  • 1 piece (s) ginger
  • 50 ml coconut milk
  • 50 g soy schnitzel
  • 1 tablespoon broth, instant
  • 600 ml water
  • 1 dash olive oil
  • 50 g rice
  • some curry paste
  • Curry powder
  • salt and pepper

Instructions

  1. Mix the broth in hot 500 ml of hot water and soak the soy dumplings in it for 5 minutes. Then drain in a sieve. In the meantime, cut the garlic, ginger and onion, carrot, bell pepper and zucchini into small pieces. Cook the rice according to the instructions on the packet.
  2. First fry the garlic, onions, curry paste and ginger in olive oil. After a short time, add the drained soy strips and season with salt and pepper. After a while add the remaining vegetables and continue to fry everything. Then deglaze with the coconut milk and about 100 ml of water and season with curry powder. Bring to the boil briefly and then serve with the rice.
