Ingredients
- 50 g shallot (s)
- 20 g iner
- 1 clove garlic
- 2 carrot (s)
- 1 leek
- 1 zucchini
- 0.25 ¼ tuber / n fennel
- 3 tablespoon butter
- 2 orange (s)
- 500 ml chicken broth
- 1 pinch (s) salt
- curry
- turmeric
- Oil (sesame oil)
- 4 tablespoon whipped cream
- 8 slices Parma ham
- 4 sprigs chervil

- Peel and finely chop shallots, ginger and garlic. Clean, wash and dice the carrots, leek, courgette and fennel bulb. Heat the butter in the saucepan, sauté all the vegetables in it and deglaze with the orange juice. Let the whole thing boil down a little and add the chicken stock. Let everything simmer for 15 minutes. Then puree in a blender or hand blender and pass through a sieve. Season the soup with salt, madras curry, turmeric and a little toasted sesame oil. Carefully fold in the whipped cream. Cut the Parma ham into strips and add them to the vegetable soup with the chervil.
