Ingredients

  • 250 g rice
  • 1 large red pepper (s)
  • 0.5 can ½ corn, approx. 165 g
  • 1 can tangerine (s), approx. 75 g
  • 1 tablespoon salad mayonnaise
  • possibly milk
  • 1 tablespoon, heaped curry powder
  • some salt and pepper
  • some cumin powder
  • possibly coriander powder

Instructions

  1. Boil the rice in enough water until it is done (rather too soft than too hard). Cut the peppers into small cubes. Drain the corn and mandarins. Possibly halve the mandarins.
  2. Drain the finished rice and let it cool down.
  3. Put the cold rice in a bowl. Add the diced paprika and corn. Then add a tablespoon of salad mayonnaise and mix well. If the mayonnaise is too firm, add a small sip of milk. Season the salad with salt and pepper. Add a pinch of cumin and if you like some coriander powder. Season with plenty of curry powder. Finally, add the mandarins and mix the salad well again.
  4. If you put it in the fridge for one night, the salad tastes twice as good. But it is also immediately delicious as a side dish for grilling.
