Ingredients
- some pumpernickel
- 1 small ciabatta
- 500 g cocktail tomatoes, red and yellow
- 1 shallot (s)
- 2 packs trout fillet (s), smoked
- some salt and pepper
- Balsamic vinegar, whiter
- Olive oil, good
- 400 ml cream
- 1 sheet gelatin
- 1 bunch wild garlic
- 1 pinch (s) salt
- 1 dash balsamic vinegar, white
- 1 dash port wine, white
- 1 half a lemon, add the juice
- some sugar
- 1 small Glass trout caviar

- In a small glass, a touch of crumbled pumpernickel is layered at the bottom, then finely diced ciabatta is placed on top. This is followed by finely diced tomatoes with shallots and smoked trout diced on top. The previous layers are drizzled with a vinaigrette (adding only white balsamic vinegar, salt, pepper and good olive oil).
- Now comes the wild garlic puma, which was prepared the day before:
- To do this, I briefly boiled 400ml of cream and dissolved a sheet of gelatine in it. Then put a bunch of wild garlic in the cream and puree the whole thing with a magic wand, put it through a fine sieve and let it cool down.
- Now the whole thing with salt, white balsamic vinegar, white port wine and the juice of half a lemon, mixed with a little sugar, season to taste and pour into the Isi. Then screw in two gas cartridges and put them in the refrigerator.
- To serve, spray the espuma on the layers and top with trout caviar and enjoy.
