Ingredients

  • 4 fish (s), ready-to-cook char
  • salt
  • Pepper from the grinder
  • 3 cloves garlic
  • 1 teaspoon lemon pepper
  • 2 tablespoon mustard, sweeter
  • Lemon juice
  • 0.5 ½ bunch parsley
  • 100 g butter
  • 6 shallot (s)
  • 2 tablespoon horseradish (cream horseradish)
  • 20 ml schnapps (fruit schnapps)

Instructions

  1. Wash the char and pat dry. Season with salt and pepper.
  2. Peel and squeeze the garlic cloves. Mix the garlic with lemon pepper, mustard and lemon juice well. Wash the parsley, chop it finely and stir into the mixture with 50 g butter. Pour half of the mustard paste into the opening of the belly of the char. Cook the fish under the grill for about 5 minutes on each side.
  3. Peel the shallots and then cut them into rings. Froth the remaining butter in a pan, stirring constantly, stir in the remaining mustard paste. Season with cream horseradish and fruit schnapps.
  4. Pour the whole thing over the char to serve and cover everything with the shallot rings.
