Baden Style Onion Cake – Vegetarian Option

Instructions

For the dough, put the flour in a bowl, make a well in the middle, crumble the yeast into it. Mix with sugar and a part of lukewarm milk and a little flour from the edge. Cover the bowl and let the dough rise in a warm place for 15 minutes.
Spread the remaining milk, salt and soft fat in flakes on the flour. Knead everything well and beat the dough until it bubbles.
Roll out the dough thinly on a greased baking sheet, cover and let rise again for 20 minutes.
In the meantime, soak the toast in milk.
Peel the onions and cut into thin rings. Stew in butter with the lid closed for at least 10 minutes. Squeeze out toast and add, cook for another 5 minutes. Mix eggs, salt, caraway seeds, cayenne pepper, cheese and sour cream and season again if necessary. Add to the onion mixture and mix.
Spread the onion mixture on the dough.
Bake in the preheated oven on the middle rack for 40 minutes at 240 degrees (without hot air). (With hot air approx. 200 degrees.)
Serve warm!
