Baked Potatoes with Sauerkraut

Potatoes, sauerkraut, onions, and eggs will be needed to prepare such an unusual casserole. It is prepared quite simply. Combine cabbage fried with onions with grated potatoes and eggs, add spices, and send to the oven. Thanks to the sourness of sauerkraut and the aroma of ground paprika, the potatoes in the finished dish acquire a very interesting taste.

Ingredients

  • Potatoes – 400 g (3 pcs.)
  • Sauerkraut – 250 g
  • Onions – 250 g (2 pcs.)
  • Eggs – 3 pcs.
  • Ground paprika – 1 teaspoon
  • Salt to taste
  • Ground black pepper – to taste
  • Butter (for frying) – 20 g

Directions

  1. Peel, rinse, and dry onions. Cut the onion into small cubes. Melt the butter in a skillet and fry the onion in it over medium heat, stirring occasionally, for 4-5 minutes.
  2. Add prepared sauerkraut to the onion. Stir. Cook for another 4-5 minutes over moderate heat, stirring occasionally.
  3. Transfer the fried vegetables to a deep bowl and cool until warm. Turn on the oven to preheat to 180 degrees.
  4. Peel the potatoes, rinse and grate on a coarse grater. Squeeze out the juice. Put the grated potatoes in a bowl with the rest of the ingredients. Mix everything.
  5. Drive eggs in there. Stir.
  6. Season to taste with ground pepper and salt (do not forget that cabbage already contains salt). You can add additional spices to your taste.
  7. Transfer prepared vegetables to a baking dish. I have a shape of 20×20 cm. Smooth with a spoon and sprinkle with ground paprika on top. Send to an oven preheated to 180 degrees for 30-40 minutes. Roasting time depends on the power of your oven.
  8. Baked potatoes with sauerkraut are ready. Cool the finished dish a little.
  9. Cut the casserole into portions and serve. If desired, you can decorate with chopped herbs and add sour cream or other sauce.
