Berry Kvass

A deliciously refreshing drink. Making berry kvass is very simple. Try it!

Ingredients

  • Fresh or frozen berries (currants, raspberries) – 300 g
  • Fresh mint – 3 sprigs
  • Lemon – 1/2 pc.
  • Sugar – 100 g (to taste)
  • Dry yeast – 1/2 teaspoon.
  • Raisins – 10 pcs.
  • Water – 2 l

Directions

  1. Rinse and sort the berries (I have white and red currants and raspberries).
  2. Crush the berries with a fork.
  3. Add mint and lemon zest to the water. Bring to a boil and cook for 3 minutes.
  4. Add berries and sugar to the water with mint and zest.
    Cool to 36-37 degrees.
  5. When the drink is slightly warm, pour it into a glass jar (I have a 2-litre one), add yeast. Stir.
  6. Cover with gauze and leave at room temperature for 24 hours.
    Strain the kvass into a bottle through cheesecloth folded in several layers. Add 7-10 raisins.
    Cap the bottle and refrigerate for 24 hours.
  7. Homemade berry kvass is ready. Enjoy a pleasant refreshing drink !!!
